I'm with Wowszer on the summoning followers strategy. If I get more than a couple of them and I can't get them all grouped close for shield bashing, summoning something like a Dremora Lord will keep one or two of them busy. Also I tend to run/maneuver around a fight a lot, so if I'm 5 feet or so away from them, their shouts tend to miss.
Another strategy would be to keep the frenzy and calm scrolls (since your a fighter) that affect a group and an invisible potion. Let them beat down your followers and then when they all gang up on you, you read the frenzy and then quaff the invisible potion and then run around until they beat on each other enough to stop chasing your invisible self and kill each other off.
Two of my more sneak based avatars learned the quiet perk from illusion so they could cast buffs and invisible while near enemies and not draw attention from the verbal component of the casting. Plus its pretty awesome when the draugr ignore a high sneak dragonborn to attack the heavy plate follower allowing you a nice backstab when they run by you. I've been known to do that with bandits as well.
Enchanting a bow or any weapon with Calm or Fear would probably work too since you can take a few hits as a fighter. I think my Bosmer Bowyer has a dagger with Fiery Soul Trap and Fear (two enchantments are nice) for the times that stuff gets in his face.
Anyway, those are a few of the more popular strategies I've read/learned/used in my few months of playing. Good Luck.
Hotkeys make it nice when you want to quickly switch from a pure damage weapon to a vampiric (health/stamina draining), soul trap, paralyze, fear and so on weapon.
