how do i surrender?
i keep getting into instances where i am surrounded and cant possibly win. what button do i hit to stand down and make them stop attacking?

You can't. You can only yield in brawls (the ones that NPCs ASK you to do, and usually bet coin on the brawl) and sometimes to hold guards.
Apparently, I saw/heard that you sheath your weapon to submit and they are supposed to stop. Though upon trying this in game, I find it does as much use as waving my arms in the air with my underpants on my head!

It won't work against somebody who starts out as hostile. If you get into a fight with somebody who likes you, or a guard (as long as your bounty isn't too high), it should work

try leaving then coming back with your weapons sheathed

You can sheath your weapons with guards and with friendly NPC's, but, if your bounty is too high, it will not work with guards and they will just keep trying to kill you..kind of annoying :P

Giants also sometimes respond to sheathing weapons, at least provided you haven't actually struck them yet, just wandered a bit too close.

Also, if you want to surrender but your weapon is already sheathed, draw the weapon again and resheath it.

Rule 1: Never retreat never surrender.

If you have to you could run away and come back because revenge is underrated.

I find that leaving the cell (which can be a ways from your location) and tooling around for a few days calms the rabble and when you return you either get arrested or ignored... depending on the offence and your perks.
