How do I set favorites/hotkeys?
I'm level 35 and I actually haven't bothered with that yet. I'm combining archery with illusion and conjuration, so switching between them can be quite irritating.

Q to favourite menu, and in there you click on your desired item to highlight it, then simply press a number key to assign it with that hotkey. Press Q again to exit fave tab and you're good to go! Max number is 8 I think. :)

But can I make 'classes'- or assign several weapons (like, two different spells) into one hotkey?
You can assign SUITS of armour sets and such by using Sky UI 4 and SKSE to support it.

That's modding territory...

Computer games, just like RL have limitations...chill man! enjoy the game

You can't assign two items into one hot key. You don't need to. Because you can dual wield anyway...so have one spell as #1 the other as #2. Simple.
Press 1 + 2 and you will have equipped the spells. I think it might try to swap between th two. Apparently, you are supposed to be able to equip weapons with right mouse button and left mouse button, so as to produce weapons in alternate hands, but the system is buggy

because the game was designed to work on a console controller, and so all the UI is screwed up.

(You will benefit SO much from installing SKSE and Sky UI 4) It removes the STUPID console dominated vanilla layout and calibrates the UI to suit the PC as should be.

If you check out Gopher's channel on youtube, he has many tutorials on how to use nexus mod manager and how to install the mods mentioned.

Despite the cleverly designed page on the nexus sign up, IT IS FREE to join the nexus site.
