But if you want a vanilla game look up the followers list at UESP. The selection is limited since Bethesda seems to think that the vast majority of players are going to be heavy armor, 2 handed weapon fighters so they have only a couple of magic-users and stealthy followers.
as for indoor sneaking, i always leave them back a ways, or even outside until i know what it's like inside. then, i usually park them somewhere strategic and kite to them rather than risk them pulling adds.
Amazing Follower Tweak adds a lot of options that are very useful.
Dark Brotherhood Initiates - you must complete the DB questline to get them, they are the best with regard to stats
Cicero - again, complete the DB questline, he is excellent if you don't mind the craziness
Aela the Huntress - you must finish the Comapanions questline to get her
Jenassa - one of the best sneak followers that you don't need a quest for. Based on her stats, she is essentially an only slightly weaker version of Aela with no quests attached, just hire her and go.
Borgak is an orc-ess that uses heavy armor, but her sneak stat is very high for some reason.
Dunno exactly the stat, but also Serana seems to be a good sneaker.
In my experience tough, in vanilla skyrim, Aela the Huntress is the only one that not only has an high sneak stat, but seems to delay attacks a little bit and prefears to stay behind and throw arrows. Other followers that have an high sneak stat seem to run in the middle of the room when THEY detect enemies, thus gving away my presence.
Agreed, completely and I prefer Aela, but some people don't want to join the Companions or the DB, so I presented Jenassa as a viable option as you don't need a quest for her. For characters just starting out, she's a lot of bang for your buck. There is also that Dark elf from Dragonborn, but I'm not sure how his sneak is. The Mercenary. I've heard great things about him. I had forgotten about Serana. She is very good too.
P.S. I could use some help with Ulfric. He somehow got stuck in the message to whiterun quest, and never gave me my orders, so I had to use console to complete that quest, but now he wanders around whiterun, showing up in my house, giving me random dialogue about which holds we need to take, and I can't start the battle for whiterun quest...any fixes? realoding previous save won't work, sadly, as I don't have one far enough back. And because of this, even though I've also helped out over 5 people in Whiterun, until I do that quest, I can't become thane and have a housecarl, to help out my poor wife.
After that use the command "moveto player" to move him to where he needs to be.
Not at all sure if this will fix it but it's worth a shot. You could also look up the console command for the quest your trying to finish and change the stage of that quest.

Edit 2: the command (assuming your on stormcloak side) for advancing the quest to an appropriate stage should be: "SetStage CWSiegeObj 1"
