Does anyone actually use the Apprentice Stone?
I really can't see any use for it. Even if you don't use builds the Apprentice stone negatives seem so much worse than the positives (which can be easily achieved with enchantments or the recovery restoration perks).

Edit: also whats the best stone for a restoration and alteration swordsman type characater? atronach or lord?

No. Only Mage related stone I use is Mage Stone. Appretince is, as you said, too nerfed. And Atronach just seems silly. I really only use Mage, Warrior, Thief, Lord, Lady, Steed, Serpent, And sometimes, though rarely, Tower Stones. The rest? Meh.

I usually use the Lord Stone. The defense bonus and magic resist are extremely useful in lowering damage against you.

Naw, the wizard or ritual stone are more useful then that lump of junk of a stone.
the ones I like to use are
Warrior
Shadow or Thief
Tower
for magic The lord stone.

Mostly I used the Shadow stone for its turning me inviz, the Sign stones in skyrim are to many Meh's for my likeing.
