I also use Arissa. She's a rogue/thief and she's a nice and mature person too, although the way you meet her is quite... unfortunate.
I've considered using Cerwiden, but she hasn't been updated in a very long time (pre-Dawnguard) and is very unlikely to get another update by her author.
I tried Sofia, but to be honest, I just couldn't stand her. Maybe it's because I am a female and she seems indeed more a follower for males, or maybe it's because I didn't find her jokes funny and didn't like her personality.
Hoth is also a good one. He's an old bounty hunter, and he gives radiant quests. He also has unique and cool looking armor, and he's often sarcastic.
There are some others, but these are the obvious ones.
Also, I'd highly recommend Interesting NPCs. It provides around 20 regular followers, all individually voice acted, and it also provides 7 or so super-followers which are pretty much like the 5 above with questlines and fully voiced acted, commenting on quests as you progress. I'm using Zora Fair-Child at the moment and she kicks butt.
Also Follower Commentary Overhaul adds extra dialogue to your standard followers like Lydia etc
I have this great appreciation for healer classes from MMOs, and that's how I originally found her. I wanted to find something just like a healer class, and she is. Not only she follows you but reinforces the feeling of a group, especially if you use multi follower mod.
This one time I made her live in Breezehome and though I never introduced her to Lydia (you can introduce her to your vanilla friends/followers), she actually talked to her. So she's actually very immersive what comes to a circle of friends. I have seen no other followers doing this kind of stuff.
When she says "Leave my friends alone!" to the mobs, it really shows her character.
And not only she restores your health, she can cure your diseases too.
And just a tip: read the book she gives you. It's important to know how to interact with her. She's pretty unique that way.
I had Follower Commentary Overhaul. I did enjoy it at first because they started to feel more like custom NPC for becoming more talkative - but then again I thought that they were too talkative. One wouldn't stop talking how he wouldn't talk to anyone who drinks Black-Briar mead.
I agreed with him about Honningbrew being better (and I wouldn't support Maven anyway), but still. xD
Yeah, its a huge mod, about 3GB in size. There is also a website blog for it where you can download the mod via torrent and has details about followers and super-followers. Type Interesting NPCs into google and should come up.
I agree about Follower Commentary Overhaul, its good at first when they start saying things you haven't heard them say before, but I travel with Lydia alot and rather than say 'Don't worry, I've got your back' a million times, now she won't stop talking about the feud between the Graymanes and the Battleborns or singing a song when we are sneaking up to a bandit camp. I can't win!
Those two mods work fine together.
You mentioned voice acting....my favorite (Super Follow) NPC in Interesting NPCs is Rumarin -- per vote, he's the favorite. He's not Inigo-level depth but those two would go well together as he's "funny"
Making those "slips" about how the sun would do some good for her, and unlike Serana's parents, Vilja's parents are flawless (liar).
I guess she can be mean too if she wants to.
I've subscribed it; I haven't really used it since I am not at the stage where I have followers yet.
