That's a good tip, but I don't want to make all the NPCs nonessential. I just wanted to know how to set certain individual NPCs as nonessential. Thanks anyway.

Brinjolf is the same way. Idk about Serana, but I think his issue is because he's set as both essential and invulnerable, takes no damage whatsoever. As I most commonly use this command to cleanse Riften of the thieves guild, I can say it works for the Blackbriars, Maul, Mercer, etc.
For Brinjolf, what I do is the same setessential 0 command, but followed by targeting him inside console, and using
damageav health 5000
I would much rather give you the key. As long as you are on the proper stage of the quest this code and acquiring the key like this will not hurt you at all. keep the save from before using this command for a little while.

BTW- you do not want to ever kill Balgruuf. Farengar ok but I would rather keep him alive as well.
