No giant have ever killed any cows of mine. Those creatures are set to act cowardly and spawned giant takes a bit time to go agressive, so getting your cow killed by it requires a special talent, or avoiding the whole battle.
Bandits did once kill my chicken, though. Raid is more chaotic and is also more likely to get one of your animals killed. Combat oriented steward and housecarl are usually able to keep enemies surrounded, until you are able to deal with them, but lesser steward might not be able to protect your livestock.
The real problem with Lakeview mansion is the nearby dagon peak. You get to kill as many dragons you ever wanted to kill - and more.
Events will not take place, before PC is in the same cell. Hearthfire effects that launch while adventuring start as scripted random ecnounters events. Those should not make permanent damage to your home, cattle or NPCs.

It is possible that my needs mod--Realistic Needs and Diseases, does cause merchants to carry more of these items. If you are serious about cooking, I'd definitely check this mod out. Then your cooking can have a purpose. You also get new recipes. I love preparing food and surviving on what I've cooked.
