As far as I know, it is the only instance in the game of a leveled reward that also directly references The Lady in the Lake and Excalibur.

You shouldn't have to game the system, like delay the quests in order to get the best possible item.
Use mods. I personally use Skyrim Reborn because not only does it unlevel the items, it also balances a lot of things in the game, like remove the OP enchanting-smithing-alchemy chain.
And this is an immersion breaker. Daedric items are made by the daedric lords themselves, legendary items that have stood the test of time, created by all-powerful beings. A mortal Dragonborn shouldn't be able to create items that can beat them.
This is why daedric items should at least be unleveled.
It's also why I like the crafting mod I linked - it allows you to create unenchanted versions of daedric artifacts you've earned (unlocking crafting recipes as you do quests), opening up the possibility of creating enchanted daedric artifacts that're at least on par with "regular" crafted gear.
