Skyrim is not a game that is "completetionist" friendly. But I know of one mod that is a completetionist's wet dream.

But it's an extremely large file. Well over 2GB. And you have to do a manual install. But the mod author gives precise manual instructions in the description. Just follow them.

You want a mod called SkyComplete - lists every single main quest, side quest, misc quest, items etc and ticks them off as you go.
