In the mod Interesting Npcs, how can I easily get multiple followers?
I know about that one mod on the nexus, but that requires you to have a really old version of Interesting Npcs, and I'd rather not do that. Anyone have any suggestions?

If you are modding then you should be using Wrye Bash.

All you have to do is set the amount of followers when rebuilding the bashed patch.

There are several other useful tweaks in there such as setting timescale, or max summons etc.

I've been using INPCs with Extensible Follower Framework with (touch wood!) no issues, there's a much more up to date patch than for AFT. Just make sure you have no 'active' followers before installing it if adding it to a new game (i.e. dismiss whoever you currently have).

I haven't tried using Wrye Bash to set the follower number for Skyrim, but I tried it for Fallout: New Vegas and it didn't work.

One word of caution, I think having multiple INPCs followers at once *may* cause issues, I don't have any hard proof, but I was using the 'don't call me dragonborn' patch on one playthrough, worked great, then I decided to restart and do some stuff differently, including picking up two INPCs, Zora and Gorr, and they started calling me dragonborn within a few minutes of picking up Gorr. It may only be an issue with that particular patch, but it's probably worth doing a bit of research to see if anyone else has had problems from using two at the same time.

(Sorry, just realised this may seem inconsistent - I've had no issues with EFF when I use it to have, say, Rumarin plus a vanilla follower or two, I mainly installed it to be able to manage outfits, and have my followers not standing stock still when I was talking to someone else or whatever.)

I use this one and it works great. Simple and effective.

Interesting NPCs compatibility with multiple follower mods (phone won't let me paste the link after this text). Suggests "simple multiple followers" and gives suggestions on how to minimise issues with AFT, I don't know if they work, but EFF with the relevant patch has been working fine in my game for about seventy hours. Worth reading the sticky on that page for other info such as DO NOT change your follower's home through mods if you haven't finished all quests they are involved in yet (marrying them and telling them to live in your home is fine, if they have that option.)
Incidentally, according to that post, you can have one INPCs follower plus one vanilla follower without any additional mods. You would also be able to use standalone followers with unique follower systems (such as Vilja and Inigo) with them. If you like Vilja, she can also act as a simple multiple follower thing by asking followers to "keep Vilja company", which is also handy if you want the group to wait somewhere.
