Role playing. It's been over a year since I've even touched the main quest (That one is for when I an *done* with Skyrim) and so far my playthroughs have been about non-Dragonborn characters.
I write about their adventures after the session.
Try out "Falskaar", an unofficial expansion-mod sort of thing, adding a big new area with new quests and NPC's to explore.
Or how about some overhauls, like "Frostfall", which adds a survival aspect to the game.
Stuff's became too easy? Try out "Requiem", a combat and balance overhaul.
Of course, you can also become simply burnt out and be mentally "finished" with Skyrim, in which case you can try to mod this game up the wazoo and still be bored.
Oh, and mods, lots and lots of mods.
Can't wrap my head around pretending to be somebody i'm not, it's too immersive :)
I don't have the time for it either, but Skyrim is an amazing game for sure
Heres a list of challenges you might want to try:

PC, use mods.
I find comford only in slutty mods. :/ And believe me nexus is full of them.
Though I would experaince most of skyrim first, Do some of the guild uests like Dark brotherhood, companions, and theives guild.
