Any way to kill or at least weaken Maven Black-Briar?
It seems a bit strange that this corrupt, arrogant, intensely unlikeable mobster is untouchable, and in fact you can only take quests that help her... wondering if I missed something somewhere.

Mjoll keeps saying that she wants to clean up Riften and I'd like to help her, but nothing ever happens in that regard.

Not at all strange. She's got loads of money and powerful friends. That largely equals being untouchable.
There's no way to hamper her, the only thing you can do is make her Jarl if you complete the re-unification of Skyrim for the Empire.

Except when she keeps threatening me with her connections in the thieves guild and Dark Brotherhood, when I'm already leader of the thieves guild and wiped out the DB...

That's what I mean, it's like putting a major villain in a game with your only option being to help them. I wish there was a quest to take her out and clean up the corruption in Riften, that's all. The way the DB was handled was much better, IMO - join them or destroy them, right at the beginning.

Ever since Oblivion, Bethesda has started making certain npc's that have a quest for them become immortal. So unless you use a mod or console commands, you really can't kill npc's with a questline.

I thought Morrowind handled this well. Nobody was invincible, but if you killed an essential NPCs, you'd get a message saying you basically screwed yourself and "the world is doomed".

I suppose they had to make certain NPCs invulnerable this time around to avoid them being killed in a dragon attack or something and leaving you with unfinishable quests, but it still feels annoying.

Even in Morrowind, you really really had to try to truly doom the world. There was a dude in the Corpsicarium (or whatever it's called in Tel Fyr) that can still help you finish the game, even if Vivec and co are dead.
