Ya, confusing. welcome to Skyrim.
But yeah, she just automatically knows because game. Similar to how things are mysteriously just known to be stolen, even very generic things like 'wooden bowl'. (That said, if you'd only befriended Hulda by doing a bit of chopping wood for the fire, it wouldn't even have counted as stealing...)
Haha you can actually befriend Hulda? I didn't know.
It's funny cuz no one has ever hired any thugs to get me. So it was a fun experience. I was walking from Helgen (clearing out the banits) to riverwood and it was like 3am so I hug out for a bit by alvors house and made some leather. Then I went to the Northern exit of Riverwood (where the bridge is) and saw 3 shady looking npc's all with heavy armor and then one of them said we are here to teach you a lesson.
I was like wtf?
I'm usualy always a "good guy" type of character so I was like who would want to teach me a lesson? All I do is help people.
It was a hard fight too. Since I was only lvl 4. I'm on a new save ^-^
Nope, well, the exact time is somewhat random (though it's usually in a few in-game days, and most often seems to happen when I leave a major city, or am in a town), but they will (or should - bugthesda etc) only appear if you have either stolen something or I think sometimes they get sent after a murder/assault (when they will have a slightly different note.)
