If you like bows or an archer type character, try with Scoped Bows and no reticle, with Climates of Tamriel's darker dungeons if you feel like having some extra challenge.
Of course, Frosfall and RND2 are a must on any playthrough for me.
These are the builds that I have played
Two handed heavy armor warrior
Sneak archer and mage archer
Light armor shield and sword warrior (I did switch to dual weild sometimes)
Pure mage
Characters you can write a story with are also fun... random in-game events can be used to create justifications for your character to change their philosophy or become interested in something new.
Also, try playing as the opposite sex if you haven't already.
Or you could try walking everywhere & just looking at the scenery. 5 years down the line and Skyrim is still beautiful when you stop to look at it.
Immersion mods can also help no end. Frostfall is a great example, as it forces you to think tactically about things like what the weather is doing, what time of day it is, how to cross that icy river, etc.
Town drunk, with a mod like Realistic needs this could work. Your a brawler using fists only. Drink 1 beer ale what ever at least every day if not more. Then see where being drunk and punching peoples faces in takes you.
I can't really think of anymore. I suggest using Live another Life mod if you want to do a play through where your not the Dragon Born. Also theres is nothing you cant do in skyrim.
First use a mod called The Collector's House. It lets you display all your collected stuff instead of just hiding it away in a chest out of sight.
Then load any treasure mod you like. I use Skyrims Unique Treasures, BadGremlins Great Jar Hunt, Unique Bows and a few others.
Then go treasure hunting. Some of these things are found in caves, out in the open or even inside the homes of NPC's (which requires lockpicking and sneak skills). I have one mod called the Black Sacrement Armor which requires you to dig up the treasure. It's made Skyrim like new again.
The first time I did this, after three years of playing, I actually came across places and things I had never seen before.
Roleplay a character.
Now I'm not talking about a class. I'm talking about an honest to god character. Is your character good or bad? Arbitrary or Just? Honorable and Wise or Clever and Tricky? Then revolve your game around that. Right now I'm playing a Chaotic Good Breton Warlock who serves Molag Bal to dominate and crush his foes and capture their souls. I help those who I see as innocent and crush those who I see as evil under my foot. I view the law and order of Skyrim and the Empire as corrupt, and I will gladly kill thalmor and imperial patrols and prisoner escorts with a flaming passion. I'm a stormcloak because I view the empire as broken, fragmented and weak and the thalmor as foes to break with my Lord's mace. I'm also a normal vampire (soon to become elder vampire)
When you play characters f on a certain worldview, you begin to divert your quests and priorities in game, and you'll really traverse down different paths.
Also, never fast travel. You'll find more loot, gold, skills and fun doing so. Clear out any dungeon you find, and you'll become insanely powerful and have fun while doing it without wasting money on training.
