Or, stunlock him with spells and be done with it, with 100 points off health you got.
Or use Invisibility, sneak behind him, cut his throat and move on.
Ebony Warrior was one of the easiest later level enemies that my first character encountering him ever had. He was a Nightblade type of character, so killing this guy was very easy for him. Just some amount of illusions and stealth and *schluch* it was over.
My later character encountered him with SkyRe and Enemy AI Overhaul. Stealth didn't work so well and she ended up getting killed several times, before she surroundered him with summoned creatures and manged to staggerlock him trough them. SkyRe stagger from spells is not 100%, like vanilla game does, so I had to cast summons several times to protect her.
Here I repeat question again:...eh hem... How much health do you think your character needed for any situation in Skyrim? as final amount of health. No enchatments and no mods (Vanila Skyrim)
100. Really, without any enhancements, if you are good at using skills and spells of vanilla game.

100 health, 100 stamina, the rest in magic. The most overpowered build in the game.
100 health, 100 magic, the rest in stamina. Pure Assissin 2nd most op build in game.
Personally, i prefer something between 320 and 400 Health and the rest spread across Stamina or Magicka, depending on the playstyle.
Worked out well.
The thing about Skyrim leveling is, that there is no "Bad Build". You can make anything work, due to it's simplicity. If you're encountering something, that whoops you left and right, use alchemy and enchantments to tweak your character accordingly.
Then I agree with you that 500 is not complete overkill ... however for your play style you don't want to sacrifice stamina either or you can find yourself barely able to lift a sword just when you thought you were going to survive a "good one" Don't discount the crafting either, it can give you just enough of an edge to survive. I think just about all of my "best" fights end up with my heart pounding. (Then I notice that my health indicator is a little red dot ;-)
