As in your image - fortify smithing - is only able to be applied to gloves and I had thought jewelry as well ... but I could be wrong (about the jewelry) - no vanilla enchanting for me in a long time!
Fortify archery only goes on helms & gloves/bracers - as another example.
The enchantment won't be greyed out as it is in the image if it can be applied to the item you've selected.

It's there any way i can delete the enchantment and learn it back ? Console command or something ?..
ACE is responsible for this.

Edit: I have always had to chose the item FIRST before selecting enchantment and so on.
Item is displayed, so it is selectable. It was grayed out because it was not valid item for ACE enchantment.
