go into that folder find the textures folder and delete it. verify the game cache and the game should download any files that are needed.
You may have to reinstall the nexus mods you want.
simply validating the game cache will reinstall the original files. so after deleting the texture meshes and other folders that are affected it should be the vanilla files shown after validating.
personally I have good download speed and unlimited so I would uninstall the game and then manually delete the skyrim folder and the mydocs/mygames/skyrim folder before reinstalling and then reinstall the nexus mods you do want.
it is up to you but sometimes starting fresh is the easiest and quickest method to get back to playing.
Many mods use loose files that take priority over BSA files. Deleting the textures can work, but it is safer using a mod manager that creates a virtual folder so files can be safely removed.
If you plan to mod again I suggest using a mod manager.

Im not really doing any heavy mods anyway. Just some nicer looking weapons, armor and such for general immersion.
