What is there to do in vanilla skyrim?
besides quests,
What other fun things can you do

Do you want to ride a ferris wheel, win a cuppie doll, or go dancing? Ain't gonna happen. Do you want to wander the country side, just looking for new areas, no problem, if that is what you want to do. Want to get all 75 achiements in Skyrim, that is possible. You will have to spend more than 20 hours in game though, even using console commands. Playing the game might be more fun.

You can do what ever you like almost whit the correct mods.
But I have not seen any mod that add one Ferris wheel.

I actually play more vanilla Skyrim than mod oriented quests/lands etc. Playing different builds in vanilla would take up the bulk of my time though I usually don't stray from stealth type gameplay.

Look into console commands. Very very fun once you learn a bit about how they work

Find all the map markers and clear all the dungeons... Pickpocket every NPC and give them 10 gold...

I assume DLC counts as vanilla, so I built and upgraded all 3 Hearthfire houses and all buyable houses. I've not yet done either quest DLC or got my 1000 bounty in each hold. So at some point I shall go on a rampage and kill a bunch of people in each town...

Unfortuantly my be all and do all character got seriously bugged, so I'll have to do all this over again too...

Collect every book in the game. Collect every type of weapon, armor and clothing. Make 1 of every potion in the game. Find the unmarked locations, like north of the Thalmor Embassy is a skeleton in the snow with weapons sticking out of him and a book nearby.

There are a ton of locations that aren't part of any quest, they are just out there. Pick an area that looks empty on your map, go there and wander until you see an undiscovered icon on your compass.

Look at Tamriel Vault, they have tons of Character Building stuff. It was a real eye opener to see all the creative stuff people came up with, like using glitches to change the attributes of standing stones and making equipment and just leaving it in NPC's houses for them to find and equip themselves. Often imagination plays a huge part, like making your own Skooma trade, eliminating all competition, or re-enacting your favorite characters. It's why I'm still playing the game to this day.~
