There is Dragon-Bone armor and weapons
You can use them for crafting, but you need a high smithing skill
1) You might be able to pay his bail to a Riften Guard, otherwise wait for him to get out maybe.
2) There are several factions. I will list them all, and put a link to the wikia page.
-Bards College
-Blades
-Greybeards
-College of Winterhold*
-Companions*
-Coven of Namira
-House Telvanni
-Dark Brotherhood*
-Imperials/Stormcloaks*
-Nightingales
-Thieves Guild*
The Dawnguard or Volkihar clans are in the dawnguard DLC
Those are all the joinable factions. I put stars next to the most important ones/best ones
and the link is below

Well, Maven Black-Briar has some links with the Thieves Guild, but doing quests for them won't directly tie you in to the Thieves Guild
Even if you joined the Thieves Guild, you don't have to stay with them or something. You can just do occasional sidequests for them if you want.

The Stormcloaks are the main enemies of the Imperials in the Civil War questline. Now that you're a Stormcloak, you cannot become an Imperial. Other than that, you can join any other faction.
Tip: Many of them are difficult to join at a low level or new game, the easiest being Companions, Dark Brotherhood, and the Thieves Guild. I recommend joining one of them first to understand how guilds/factions work.

As it happens, The Jagged Crown quest gives a chance to swap sides:

You can almost rule all of it if you want. Except you can only choose one from the civil war faction side ofcourse.

You can do any quest at any time. You can even do several quests at the same time. The game is open that way. Some players don't even attempt the main questline, just wander the area. Btw, check by using ESC/Quest to make any quest as active, follow the arrow.

You can be in the Companions and Dark Brotherhood. You can be in almost every faction at the same time
