You can use them for crafting, but you need a high smithing skill
1) You might be able to pay his bail to a Riften Guard, otherwise wait for him to get out maybe.
2) There are several factions. I will list them all, and put a link to the wikia page.
-Bards College
-Blades
-Greybeards
-College of Winterhold*
-Companions*
-Coven of Namira
-House Telvanni
-Dark Brotherhood*
-Imperials/Stormcloaks*
-Nightingales
-Thieves Guild*
The Dawnguard or Volkihar clans are in the dawnguard DLC
Those are all the joinable factions. I put stars next to the most important ones/best ones
and the link is below

I'm doing black-briar quest
black-briar is not guild , right ?
Even if you joined the Thieves Guild, you don't have to stay with them or something. You can just do occasional sidequests for them if you want.
so what guild can I join now ?
Tip: Many of them are difficult to join at a low level or new game, the easiest being Companions, Dark Brotherhood, and the Thieves Guild. I recommend joining one of them first to understand how guilds/factions work.
As it happens, The Jagged Crown quest gives a chance to swap sides:

If i join companions
can i change to drak brotherhood or other ?
