A less violent method is to get the Summon Arvak spell, in the Soul Cairn during the Dawnguard questline. You "own" the last horse you rode, so only that horse follows you... but Arvak can't, because he tends to despawn the moment you get off him.
He's such a good horse.
I'm not actually aware of any other method to stop horses following you, short of console commands or mods. I haven't had to look into those myself.
I will step in to say that vanilla horse management feature is lacking and having a horse without inventory is silly.
And if you play with mods like Campfire, Frostfall, Realistic Needs and Diseases 2 and Hunterborn, then having either a horse or a follower as a pack mule is almost mandatory.
Edit: No, I do not call Lydia as ponygirl. Perish the thought.
At least not in front of her face. :p
