" I found that it takes some time for him to become nonessential after talking to him and it depends on the time of day the quest is done.
It works best if you tell him he will not be harmed. Get the information and leave and hang around or go do something else in the world (don't use the "wait" system) until he goes to sleep (after midnight), then sneak into the kitchen and kill him.
Trying to kill him right away doesn't seem to give him time for his script to change to nonessential and it seems like it changes after he goes to sleep at night or at least some period of time after talking to him."

I also tried others saves but they all don´t work...
If that doesn't work you can try this with the console.

It is worth noting the following warning though:
"While it is fine to change an NPC to essential yourself and then decide later to make them mortal again, you should never set an NPC that is essential (immortal) in the vanilla game (i.e., before modifications) as mortal. If they're already essential, don't change them. Certainly do not save the game if you do. If an originally essential NPC dies it will undoubtedly break whole quests, entire questlines, or perhaps even the entire story, and you'll be forced to reload a previous save."
