The others are not humanoid races, but may be humanoid in appearance, and are classed as monsters or creatures.
The distinction is arbitrary and was implemented by the Mages Guild at the request of Vanus Galerion as a means to limit the practice of soul trapping.
At one point in time only white souls could be captured, but necromancers, led by the Order of the Black Worm, found a way to capture human souls by creating black soul gems. Originally, black gems were created through a necromantic ritual from grand soul gems (Necromancer's Moon). However, some are found naturally in Blackreach (mine a geode ore vein) so the lore isn't consistent - which isn't exactly surprising as lore changes from game to game in the series.
It's possibble the Black Worm-created black gems are some kind of artificial re-creation of a naturally-occuring phenomenon. They're like the pleather of necromancy.
