My build is normally using the Lunari race (Nexus mod), and focuses on the "Stealth Sniper" kind of person. I love it. I got my char at one point in a previous playthrough where I could sneak up to a Falmer and backstab it or 1-shot it at 30+ yards.
I do carry some small blades with me, normally the Blade of Woe from the DB questline. I favor the Ancient Falmer Armor when I can get it because of it's bow/arrow enchantments and it's light armor status.
No magic, just pure skill. XD
I created a sword and board character not too long ago since I've never made one. I have to say that character is a lot more fun than I ever thought it could be. I was really suprised that I was using the same if not more tactics than I do with my other characters.
I also have a mage I started recently. This one was a pain in the butt since I went with no armor (Lydia acts as a decent tank though). I really wasn't having much fun with him untill I unlocked the perk in the destruction tree that does knockdowns (forgot the name), and with some conjuration perks unlocked he is coming a long nicely. I've finally started to solo areas with him and it's been pretty fun.
But my favorite is the first one I listed. Glass cannons are just so much fun.
TL;DR - Glass Cannon
As i use robes restoration is also important for me. I think being a fast healing argonian also helped a little there with using robes. And i like to explore dwarven caves/dungeons and like to call myself a dwarven scientist/explorer.
I'm also playing as a nice guy. I live in solitude with a tiny family. Both of the girls are those you can adopt from the streets of Whiterun and Windhelm. Im on the imperial side for various reasons.

Basically a an Archer+Healer mix...sort of like a druid except without any addictional magic and only specing in archery, healing and speech..and a little bit of sneak to buff sneak crits with archery.
Or "The Solitude Guard." Wear Solitude guard outfit, be a nord, use imperial weapons and the solitude guard's shield, or the shield of Solitude. Only do missions in Solitude.
though considering how easy it is to die in my game archery with 1handed back up
though creating a build just aint the same as it was in oblivion
I also tried a run were i exclusively fought with poison and a crappy dagger, once you start making some really good poisons it just absolutely stuned me how powerful it can be. (assuming they arent immune to poison)
I also tried a pacifist monk build who could only bring harm to the undead, it made the dawngaurd questline feel somehow much more epic when i was punching the brains out of every draugr, vampire and everything else, but when you have to run away from even the lowliest of bandits even though you could totally take the ♥♥♥♥♥♥♥ in a straight fight, it really pushes your patience to the limit, early game was brutal though since i couldent really aquire any real kind of power.
Not that long ago i made a merchant type character, and i would only hire others to fight, its quite interesting playing a game were you cant use magic, cant use weapons, and cant wear armor and have to solely rely on others to keep you alive, since my skills mainly focused on speechcraft and crafting skills and such i ended up for the first time ever getting speechcraft to 100.
I think the next build im gonna do is a support type character who casts buffs and heals on allies and debuffs on enemies, could be interesting thats forsure.
More recently I like playing against types. Currently I have a Khajiit who loves the Stormcloaks, wears his Nordic Carved Armour with pride and smashes heads with a Dovah's shin bone.
Khajiit love taking things. So khajiit took Nord's pride.
Because it's easy asf.
Skyrim: Get alchemy or Illusion high and just spam invisibility. With enough sneaking skill you can also just smack someone in the ♥♥♥♥ with a daedric warhammer, run away into a dark corner and you can go back again.
Oblivion: Finished mages guild quests, become Archmage. Now enchant all your armour to have chamelion. You can smack someone right in the ♥♥♥♥ with a daedric warhammer and they won't notice. Or sneaksnipe.
Never played Morrowind. From what it sounds like you can smack in the ♥♥♥♥ with a daedric warhammer but will likely 'miss' because lololdschoolrpgs.
I actively avoid stealth now because it's just a breeze. Speaking of breeze, if you stealth you can pretty much just go naked without any armour for most dungeons. Because you never get into fights.
Sword and board warrior can facetank just anything, has massive hp, insane durability, control skills, good damage output. Large stamina pool and Block perks let him sprint in and out of battle safe and easy.
2H warriors a little bit more tricky to use and require good timing of attacks. Still, these are durable, have AoE attacks and deal some awesome damage.
In skyrim there are situations where you're trapped in limited space or on the open against enemies who see you almost no matter what and are very hard to backstab. So you either tank them or drink your potions non-stop.
Of course you can spam invisibility, muffle and 100 Master level sneak perk to backstab just (almost) anyone. Or you can kill all those targets by just looking in their general direction with your ~50 warrior skills.
In Morrowind you can get 90% Chameleon and kill people by stabbing them repeatedly by a fork - and they won't notice you. There are no dragon priests, auto-tracking vampire packs, dragons, boss fights in 10x10m rooms, forced party members, who ruin you stealth.
In Skyrim Warrior is a posterboy for a reason.
This time I am spreading out what he does (yes, I am actually playing a guy). Using alchemy, enchanting, block, one-handed, sneak, archery and lockpicking. I have no problem with using legendary on everything but one-handed and armor to keep leveling.
