Yeah, that's the only way to do it at the moment. I guess it would be possibe for someone to make a mod that syncs the game to your computer's time, but no mod like that exists yet. Maybe I could throw together a mod like that at some point.
If you REALLY know Skyrim well, challenge yourself by playing with the monitor turned off. Though there's prolly a mod for that too.

Most of my playthrough is attributed to Skyrim Scaling Stopper and Skyrim Scarcity which stops level scaling and lowers the amount of loot. So instead of having bandits level with me, often times they are 10-15 levels above me and sometimes even 20...same goes for other enemies. It makes the world a lot more dangerous. Loot is also unleveled, I once saw a Daedric Mace being sold in a store at level 10, but it was worth about 7000 gold because I use Trade and Barter to fix the enonomy and make merchants more strict with their prices. Scarcity works well with it because it reduces the amount, so I wont go into a dungeon and see like 5 Daedric swords in a chest or something. Scaling Stopper also uses percentages for items. Iron and Steel weapons are a lot more common and typically the only thing that merchants carry most of the time.
It sounds really difficult, but its a lot more fun and imo what Skyrim should have been like from the start. You no longer feel like you aren't getting more powerful as you level up. You start really weak and become more powerful. Kind of like how Morrowind is.
Then I threw in a bunch of immersion mods for when I dont feel like getting my ass handed to me in dungeons. Already saw Tavern Games mentioned. Thats one of the mods I use. I also like iNeed.
Haha only reason I dont use Requiem is because of all the other stuff that is added. I have 211 plugins active, but the game is still largely vanilla. Its just unleveled and more immersive. Hell, I dont even use SKY UI (I use SKY UI Away so that I can use the MCM menu, without changing the vanilla UI). A lot of the mods are overhauls to NPCs and stuff. Like everything added in Immersive Citizens should have been in the game from the start. Same with Civil War Overhaul.
