You get a marker for every quest. The map can have dozens of markers on it. Hover the mouse over the marker to see which quest it relates to.
Also, if you hold on to it, he will stay open 24 hours a day. No need to come back later or wait/sleep until morning to sell off loot if you're in the area.

Do you mean if I find out who owns the Golden Claw I have to hand it in? I never found out who owns it. This game seems to fart me around until I don't know what I'm doing. The next thing I know I'll be catching my butt in my hands.

Press "J" to open your journal. From there you can change which quests are your active/inactive ones. Only the active quests get the waypoint markers, and new markers don't appear unless you either activate the quest or complete all active quests and start a brand new quest without changing any of your inactive quests into active quests.
