Found this on a different forum.
I have solved this problem, at least for me. I searched all over the Internet and couldn't find a solution so as far as I know, I'm the first to contribute on this. Serana had been following me through Dawnguard, Hearthfire, and now into Dragonborn. She is the BEST. All of a sudden every time she used her Vampire Drain on an enemy, I would get the pink screen, and the message that I needed to feed, etc....very frustrating. I wracked my brain for what had changed recently, and remembered that as with most followers, you can give them potions for healing, etc....I had given Serana the Blood Potion for healing vampires, which I thought was cool, but apparently strengthened her Vampire Drain too much. I took the potion away from her, and bingo.....my beautiful Serana was back. As a safety I took all potions away from her. DISCLAIMER: I noticed this right off and kept reverting to a save that was right before this all happened. If you're into the vampire thing a few days after, or have no save, I don't know what this fix will do for you but it worked for me. Good Luck!

@OP: What jimanity says rings some bells with me as well, I hadn't thought about it but I did read somewhere the blood potion does fun things to Serana (by fun I mean not fun, like negative fun).
