Decided to use 1h / Shield / Healing spells / undead effective magic from spells from Apocalypse - Magic of Skyrim, would it still be a paladin if I used light armor rather than heavy armor? I am still only level 8 with no points invested into any perks yet so I'm free to change anything atm. I will also be using Dawnbreaker.
Sounds like a paladin to me minus the armor choice, most use heavy. Of the ones you listed I'd strongly suggest the Lady, I've made great use of the extra regen even though it seems like it wouldn't be terribly noticeable. Atronach would still be a better overall choice for what is effectively the typical breton battlemage. They already resist magic and that spell absorb just makes you crap all over enemy mages.
If you can't remember to sleep or just don't want to be hassled by it then use the Lover Stone. You get 15% bonus to all of the skills.
If you do the quest Lost to the Ages and aquire the Aetherial Crown then you can use two standing stones at the same time, such as the Warrior Stone and the Lover Stone. If you unequip the Aetherial Crown before you sleep you can receive a sleeping bonus and then re-equip the crown afterwards for a combined total of 45% bonus to all skills.
You can use the crown to have any combination of two standing stones.

Regarding the skills for your Paladin, I'd say you're pretty much good to go. Light Armor isn't a skill Paladins would typically use since Heavy Armor is more in line with the build, but which one you choose doesn't really matter if you already have the core concepts of the build set up.
