Make Hearthfire actually good? How about having my children age, or at least go to school and get bullied or something? That way I can actually be a realistic dad (as realistic as a giant cat can be) and do something about it. Like fist fight his dad in a bar!
Hmm...How about more control over the storyline? Like if I could go the Mr Stormcloak route and kill someone of importance, and have the storyline bend in a different direction.
Is it me, or does skyrim seem bland in terms of color (vanilla)? How about making the game look more like Oblivion, and bring the whimsy back via colors?
Yes, remember Balmora, the city where every house looked the same and every character had no character. I agree that the cities could be improved, but Morrowind really isn't where we should look for inspiration.
A secret/undiscovered civilization I'd say is rather stretching it, but underwater ruins and improved shipwrecks would be great. Pretty much all of the provinces would be ok with this, and we'd get to see a whole new cast of enemies and creatures. The only problem I can see with it is that it takes the Argonians useless trait and turns it into a godly advantage.

Sorry, I just hate when people do that. Anyways, since Morrowind the series' lore has been pretty stable, so I doubt they'd add more playable races. And a permadeath mode wouldn't really be needed, especially considering the fact if wouldn't know if you died of a glitch or something.
One thing I'd like to see is the Daedra variety from Morrowind and Oblivion returned. In them you had different ranks of Dremora, spider Daedra, Clanfears, scamps, the atronachs, Daedroth, ogrims, twilights, Golden Saints, Dark Seducers, xivilai, and I'm sure a few others I'm forgetting, than in Skyrim we get one Dremora and the atronachs.
There was the time the sabercat ambushed me from under the water while I was walking the beach, but it just isn't the same.
