Because he will almost certainly outlive you if you don't kill him? (I mean, there are ways and means of becoming immortal but Dragonborn human(oid)s are not inherently so). There hasn't been a (known) Dragonborn for quite some time, certainly not one who's been shown to be able to absorb dragon souls (fully killing dragons), so there's every chance that if Paarthurnax just waits for the Dragonborn to die, there would be nobody left who could (permanently) stop him.
I mean, I don't agree with her, she sucks and her logic sucks, but this specific point ('just wait and see, and I'll kill him if necessary') is pretty easily argued against.
