Are you using a torch or mage light?
Also, removing shadows shouldn't make the dungeons darker.
It could be my brightness too tho, as i use f.lux. But when i messed with it in game it didnt change too much. But theres certin parts in dungeons where its just to dark to see anything, and even weirder to bright to see anything. the town near the 7,000 steps, it has this small cave where a bear was, and its so bright. like blinding bright.

This, this right here, is why FO3, this game, and FO4 are lit so brightly that full night is nearly the same as daylight.
Its supposed to be an RPG, not a hack and slash. Hotkey your sword and torch and swap between them.
Otherwise - check gamma - either the in-game/launcher settings or your monitor's brightness. Either of those should help to lighten the dark areas up.
