Other than High Hrothgar, I find any Kynareth Sanctuary (ones with the tree symbol) are picturesque. Sadly, you often have Spriggans to deal with. If you are new to the game, there is one place that I won't spoil for you. Just let Septimus Signus point the way.
Eldergleam grove, ancestor grove.

Right! The Eldergleem Sanctuary. Hopefully you have talked to the priest of Kynareth in Whiterun.

If you have the Dawnguard DLC, the Forgotten Vale is a place where I'd like to live once I have saved the world and retired; if only I could build a house there...
The soul cairn.
...I like the color purple...
Blackreach. Its breathtaking. (Fight your way through MZALFT if you havent already, it will take you there and my goodness is it worth it.)

You are thinking of Mzark. Mzulft is over far to the East.
You can enter through several different ruins.

Underground bathhouse.

(Will require you to apply your PC masterrace modding privileges though)

Soul Cairn has some nice colors. Riften area has the most natural vegetation of Skyrim, so just hang around there and you'll probably find something. Whiterun is tundra, Windhelm is depressing snow, Winterhold is more fierce snow, Markarth is like ruins, Morthal is swamp. Solitude is sea (no real beaches though), but if you do the sink the ship quest from the argonian dude, it leads you to a nice camp/beach+lighthouse area north.

Mod wise, "the oasis" has a nice tropical feel to it, without changing your whole game like tropical skyrim does.

I've always found the tranquility of Deepfolk Crossing to be a place I always make a point of camping in.

Blackreach for me.

North shores during sunset. There are few very nice places, where I often place my camp, when I am travelling along the coastline.
