Live another life is one of them.
Do you have any issues in the start of the game?
This, or let the intro finish playing. I don't know about subsequent playthroughs, but as I recall Skyrim creates a manual save on the first run, just before Hadvar starts reading his list.

is probably what you're looking for.
If you find your way to Helgen, you'll see the aftermath from the original start.
Alternate start - live another life
Pick one. Both are good, but in my opinion, second one is more immersive. And the first one has more options to choose.
As far as I know the movement controls don't even unlock until after Alduin attacks, and the town is inescapable by that time. But you can make a save right before entering the character creator.
There's no skipping the story line. At least for Alternate Start, you choose where you want to start and how (necromancer, homeowner, new guy @ faction). The mod leads you back to Helgen and the Imperial/Stormcloak survivor who take you to Riverwood. You just skip the intro sequence with being carted off to Helgen with Ulfric and your head being saved thanks to a dragon attack.
Even in vanilla you can totally skip the main quest, just don't go to Bleak Falls Barrow/collect the Dragonstone/take it to Farengar (you could, I suppose, take it to Farengar and then avoid the area with the dragon fight but that would probably be tricky and potentially gum up the game, it's best not to abandon/postpone the MQ at points when an NPC is out of their usual location waiting for you - e.g. when Delphine's gone to Kynesgrove).
In ASLAL, you can ignore Helgen as long as you like, once you approach the area it triggers Alduin flying away and that prompts you to investigate the rubble. If you never go near Helgen, the MQ doesn't happen. (And even if you happen into the area, it just puts you at the point of 'go and warn the people of Riverwood' which you can pretty safely ignore.)
If you want to be able to actually properly skip the MQ and still have dragons/do the Civil War, by the way, Skyrim Unbound is the way to go. With Skyrim Unbound, you skip everything up to Mirmulnir - when you absorb your first dragon soul, you hear the Greybeards' summoning you to High Hrothgar and The Way Of The Voice initiates. If you don't want the MQ triggered, you can simply set the MCM so that you either don't have dragons at all, or you have dragons but don't absorb their souls. You can, as I understand it, still play through the Civil War without having to sort out Balgruuf's dragon concerns, though I've not tried it myself as I like the Civil War even less than the MQ.
Oh, and ASLAL also has an option of doing the actual vanilla start - this is useful if you want to use it to safely install all your mods at the very start of the playthrough (with the exception of any mods like Helgen Reborn which specify they MUST be installed after escaping the cave under Helgen) but still want your character to go through Helgen.
