There's a place that I think is perfect right in the middle between Riverwood, Whiterun and High Hrothgar. There is a peak ... tall hill close to where the road does a double bend while following the river.
It would create an area that can become a fortress as the road has a lot of high embankments. It also creates an area behind connecting the road to Bleak falls Barrow and a down hill run straight down to whiterun ... so that would make a safe stable area.
With a Viewing area at the top of a mansion there, you would have a views down riverwood valley and the whole whiterun valley.
Once you get the basics down(how to place stuff and move it) its pretty simple.
Bethesda has some CK tutorials on their YT channel. If you watch those you'll get the hang of it pretty fast.

To get started I just wanted to add extra seats to a hot tub the mod author had built and uploaded. Asked and he said knock yourself out ... So for my own game just loaded his mod into the CK and then replaced the seats with ones I wanted and renavmeshed the area around it.
So that was simple and doing the tutorials are good but for a large house ... mansion .. I found I preferred to play with others mods.
Hope it works for you, if it becomes a mod I would be very interested!
Sadly I tend to either get bored or lose inspiration once I've started, unless I find some primo real estate.
There is also a beautiful spot in the forests in southern Falkreath, I think located a bit east of Peak's Shade Tower, probably on a different access trail.

I also liked the idea of building near High Hrothgar. I'd have to go look at the layout in game, but I think I would go for the mountain/peak on the east side, and maybe tie it in to the trail on the main mountain.
But, when I do come across it again I'll be sure to post a screenshot of it with a personal map marker on it.
all eager to join you. When you split up she/he will head back to the bathhouse so you never lose track of them. Even a divorced spouse will continue to live there. lol

I'm not connected in anyway to Andragon but I really love his/her mod.
As best as I can remember, that little grove is off one of the trails that splits off the road between Falkreath and Helgan, heading south, probably near and east of the bandits outpost/bridge that drops rocks all over the road. Hope it helps.
