I did the "showracemenu" command and when I finished selecting my race I am bound(I cant do anything and my hands are behind my back). Is there a code that can unbind you?

Sounds like Zaz animation. Default prisoner glowes - which act as "binds" in the game - follow Zaz rules as well, but they do not have actual binding script. Jumping should indeed remove the animation.
