I don't think there is a mod like that, since Skyrim runs on magic, onsidering all the NPC mages, dragons, and elementals.

So you want a mod that disables most of the enemy variety, a ton of the NPCs, many many quests (also rendering many of the remaining incompletable), Vampires, Werewolves, a third (possibly more) of the skill tree, etc.
Why not just find a similar game without magic?

I think a mod that took all magic out and added it back in the form of gadgets and weapons would be amazing.

Mount & Blade or Mount & Blade Warband?

Now this would be creative. There's some problems obviously, for example the Daderic Princes, but I could see it being interesting, if extremely massive to make.

Use "Skyrim: Unbound" only on Steam Workshop, the mod allows you to start a new game with no spells, you'll still have a Magic bar-just don't put any points in magic, or perk any of the magic trees. The mod will even stop you from being the Dragonborn.........

That's definitely an interesting idea. While most Nords in the game don't like magic, there already is a whole College devoted to it, along with other camps and such. That said, it does feel weird when a random bandit starts shooting ice spikes at you.

I remember reading a thread on RPG.net a few years ago about stupid GM decisions. One story told about a GM running a realistic Mechwarrior game. As the GM decided that sixty foot mechs was unrealistic he didn't included them in the game.

The OP has an interesting idea, and not just for this game. I mean, you could really have a very different gaming experience removing the magic frrom Skyrim.... or removing the military units from Civilization, or all the trucks from Euro Truck Sim 2. It could really open things up a lot!! Just imagine how totally different Battlefield games would play if you removed all ammunition. Very intriguing idea. I like the way the OP thinks. Then again I like watching sparrows fly into bay windows, so you can't always go by me.
