Can no longer steal dibella statue?

So in Markarth there is this beggar who wants you to steal a dibella statue from the temple and will then pay you off.

I can do this with sneak + some invisibility potions. If I successfully do it, I dont get caught and I never get to experience the dibella girl quest.

If I get caught, I get that new quest, but can no longer steal the statue for the old guy (even after finishing it) since there will be no more dialogue option for the guy.

Even retrieving Lisbet's dibella statue from her corpse after that cannibal quest wont make the old dude accept it.

Is there a possiblity to do both?

Steal that statue and give it to the beggar.
Sneak back, get caught and get the mission for Sybil.
