This is a simpler mod that focuses on leveled lists and parcelling them out by location.

This mod goes further by modifying found and crafted equipment as well to fit with the leveled lists. Stats of gear will change.
If what you are really looking for is to have your character be nearly invincable and crush everything before you with ease around level 30+, then just turn the Difficulty to Novice.
word of advice if you're thinking about this one, you'll have a more equilibriated game if you use the full version over the modular version, as the difficulty accounts for changes the author made to equipment and armor values, which can make it seem incredibly difficult if paired up with combat mods
RUSR and all variants of permaZONES are fairer in that regard - and more compatible - but i have heard of SU being referred to as requiem-lite, which is probably an apt moniker, all things considered

You have 178 hours played ~ you have barely scratched the surface. How many races have you played as? How many of the guilds have you joined and become leader of? How many side quests have you done? Have you done all the Daedric quests ... the Civil War ... or any of the side quests? That main quest is just ... one.
Then play vanilla Skyrim....
Reach level 50 or so, literally nothing can stop you after you get about that high if you invested your points into combat or stealth.
