Removing the gear from her/him first will ensure they will wear what you give. As they are programmed to wear things that are "better" So if she is wearing ebony armor she will not wear leather .
So removing the gear will ensure.
What will happen then is you get exactly the same set up as if you were selling in a shop. Their inventory will be on top and yours on the bottom.
Highlight what you want to give them and the option to give will come up at the bottom of the screen (for me it's R but I may have mucked about with the controls a bit)
Watch out though. If the follower doesn't like what you've given them, they may not wear it. If that's the case you will have to take every other option away from them.

Do you mean the flawless amethysts for the ring? I'm afraid you'll just have to loot them. They appear randomly. All you can do is play the game and eventually you'll get 3 from loot etc.
