That is the only way to fail the quest to my knowledge - to kill the priest prematurely. You have to let Molag Bal torture him prior to that, otherwise you will fail the quest.
Think this is what I might have done.. Very annoying, been playing around with console commands and cannot seem to restart the mission, even after resurrecting Logrolf.. super annoying
I had a similar issue with the main quest recently - for some reason Unbound never started nor completed and Hadvar just stood outside Helgen. Alduin didn't even fly overhead. I tried using console commands to fix the issue, but apparently despite not having received a journal entry Unbound was completed. So, I had to use them to start Before The Storm and progress it to the point where I talk to Jarl Balgruuf of Whiterun. Something like that you can fix with console commands.
But to my knowledge, your only option here is to reload to an earlier save. I could be wrong, but from my experience with this game - I've got over 2,700 hours on Skyrim alone - I've never been able to fix a completed or failed quest with console commands. Only reloading to an earlier save works in this regard.
If your actual goal is the related achievement, you have other options for getting that.
If you have Dawnguard, and are running the unofficial patch for it, then Auriel's Bow[en.uesp.net] will be incorrectly flagged as a Daedric artifact and can be used for the achievement in place of one of the proper items.
Without the patch, you may be able to acquire multiple rewards from Hircine's quest[en.uesp.net], each of which will also increase the artifact counter.
Or you could just borrow a save.[www.nexusmods.com]
