What's your "Game Over" screen?
Skyrim affords you a lot of freedom in how you live as the Dragonborn.

You can be various races, male, female, a thief, an assassin, a soldier, a loner, a bard, a romancer, a spouse, a homesteader, a noble, a blacksmith, a werewolf, a vampire, a dragon slayer, a roving merchant, a mage, a corrupted daedra worshipper

etc

When I replay this game, I tend to not go all the way through the main storyline. I don't consider it a goal to achieve, and a conclusion to my story.
Even when I finish the "main story" I tend to mess around, do a faction quest, or go to Solstheim hours after the main story.

Not all of my characters reach the same benchmarks. Some are pure mages, or just petty pickpockets.

So I thought I'd ask:

When is Skyrim over for you?
When you get married, adopt some kids, and put your axes on the wall?
When you end the civil war?
When you whirlwind sprint directly off High Hrothgar for the lols?

Largely depends on the Character. I have many characters in a universe of my own creation that I can pull from, with the central character being Rez Elwin. In his case, he is a noble-born turned thief, then a soldier for the crown, he eventually leaves the service to spend more time with his family and creates a professional mercenary company to help his people without military restrictions.

So in Skyrim I start with the thieves guild, then join the legion. I the start the main quest because early in his career he encountered/slew a dragon, I find a wife and then finish the civil war. Since the greybeards called Rez is compelled to investigate that, which is where the story strays more from my character intp the Elder Scrolls side of things. I do everything according to how Rez would act, that doesn't change.

He is not proficient enough to called a mage though he does know some magic, I never join the college, he also doesn’t do assassin work either, another faction he doesn’t Join. I have separate characters for each of those.

Well, as you said, you can have different kinds of characters and backgrounds. So when the game ends will always differ from what character I'm playing.

But Aldiuns defeat is The end for me as a player. The last thing I'll do and after that everything else seems unimportant. You've defeated the great evil and been to Sovngard, even the civil war seems like a tavern brawl at that point because the bard at the tavern is singing the tale of the tongues in the background.
