Had that issue with horses and first tried what Angeliceron suggested - until I found the above answer. (was looking for the original reference on FNIS site - just can't locate it offhand, now)

So if you have ever used a console command which effected the AI of an animal that could be the result.
Right click Skyrim in steam library. select properties, local tab, then verify cache.
Let it do it's checking, it will always find 1 file missing if it finds more that are missing that may be where your problem came from. Restart your computer before opening Skyrim reloading a previous save Before you deleted any Mods ... then test to see if your problem is fixed.
2 Do you use Loot to sort your load order?
https://loot.github.io/ click three bars in center to run loot and have it sort your load order
When done click the three dots in top right select copy load order and paste here in thread
3 Have you rerun FNIS ?
The Tpose is usually associated with FNIS not working.
4 Where in your load order is your XPMSE skeleton mod?
if it's too high in your load order, such that it gets over ridden.
You could try putting your XPMSE mod as low as possible in load order and see if that helps.
If you have a mod that adds animations, you need to install FNIS:
Fores New Idles in Skyrim - FNIS - https://www.nexusmods.com/skyrim/mods/11811
Each time you install or uninstall a mod that requires FNIS, you need to run FNIS (this is explained in the mod's pages) or you will get that T-pose - or frozen animal if it is a beast animation. The best thing right now is to do as Eternie suggests in the above post.
I did run LOOT and these are the results, btw I am still kind of new to this modding thing so bear with me please:
0 0 Skyrim.esm
1 1 Update.esm
2 2 Dawnguard.esm
3 3 HearthFires.esm
4 4 Dragonborn.esm
5 5 MainMenu.esp
6 6 Random Vampire Attacks in Towns Disabled.esp

Furthermore, if you are new to modding, as you say, then you absolutely must read the following and do all they say you need to do if you intend to mod the game further.
Excellent advice regarding modding Skyrim (essay written by PeggleFrank - written for original Skyrim, but basic principles apply to SSE, as well) http://steamcommunity.com/app/72850/discussions/0/343787920127409994/#c343787920127583150

And, it is absolutely essential that you install:

did you had other mods installed? (because you mentioned in the beginning you disabled couple of mods)
In the past I have. But I had deleted them from Nexus Mod Manager a long time ago. These are the only mods I had on when I discovered the problem as well as an audio fix for the wolves howling because Dawnguard had them on mute (which doesn't show up in LOOT for some reason). And when I saw disabling them didn't fix the issue I reinstalled them.
You don't need FNIS for Vanilla assets, if i had to guess i would guess that number 6 is messing with the Dawnguard dogs.
Remove it completely including all scripts and animations that come with it (To Test), if that doesn't work i would run an file integrity check.
Also i just read you had a wolf mod installed, using nexus mod manager scripts and animations never get fully removed.
You might want to consider doing a fresh install and using Mod Organizer to manage your files.
"Random Vampire Attacks Disabled mod" is perfectly fine in my load order and has been for years. It's a simple mod that works well. Do Not remove it.
I haven't used "Main Menu mod" but that also seems like a light and mod that wouldn't be effecting anything either.
As smr1947 and Grumpy pointed however if you previously had mods installed especially mods that had animation files they may have left files behind in amongst the document files. That is what needs to be cleaned and brought back to vanilla. If you follow their links to
