If you get a weapons/armour or piece of enchanted jewellery, I would personally disenchant it to learn the enchantment, so I could apply it to any gear I craft. But it's a personal choice and plenty of pure warriors play without learning enchantments at all.
Then, I decide how much the item could sell for vs how much I need the enchantment. If I get an ebony sword of the inferno and I need to learn the fire damage enchantment, I'm probably still going to sell the sword and wait for an iron sword of embers to disenchant instead. You can only learn the enchantment once, so no need to destroy an expensive piece when a cheap one will come along shortly.
A few things you may want to disenchant right away, because they're rare and unlikely to come along again, any time soon: Carry weight (boots of strength, etc.), muffle, and water breathing. The banish enchantment will start to show up around lvl 23, and I usually disenchant the first one I get, because it is used for enchanting very valuable weapons with relatively cheap petty soul gems. That said, it comes along a bit more regularly after that, if you choose not to go that route.
If you use mods and want to RP as a non-magical individual, but still want the benefit of enchanted gear, you can use a mod called Honed Metal (nexus), which will allow blacksmiths to make and upgrade armor for you, and certain mages to put enchantments on them for you. You can walk into Whiterun at level noob and, if you have the money, walk out with a legendary sword with 20ish points of fire damage, just by visiting Eorlund Greymane and Farengar.
