If that's still not the answer, then maybe Perkus Maximus and a few spell mods. Sometimes simple changes are best to reignite that flame you used to have for a game
The problem is that I already did move on. I haven't played in months and every now and then I have an urge to go back for a few weeks, but I don't because I know my motivation will just die again. All my save files are gone too due to extreme mod purging I had to do a bit ago, so everything has to be a new character.
What mods do you have specifically? If you haven't tried quest mods, those might be the answer. The obvious example would be Moonpath to Elsweyr, but also Spectraverse if you like using magic.
I keep hitting a bottleneck where I know the quest rewards are worth it but the quests themselves are unbearably boring.
I use a LOT of quality of life and immersion mods, stuff that adds content without ♥♥♥♥♥♥♥ with immersion. So new weapons and enemies are okay as long as they arent Thomas the Tank Engine. I'd have to look around at quest mods, but I'd STILL have to get a new character to a decent level to deal with enemies like Falmer and Dwemer without getting my ass kicked.

And dude, I don't want to talk ♥♥♥♥, but a lot of those screenshots look like B-tier content. Call me an a**hole but I can't stand anything that isn't mostly high quality. It ruins the enjoyment if I have large empty areas, bad models (quality or enlarged) or crappy skyboxes.
either start a new character or don't wear good weapons and armor.
otherwise, yes, the game becomes boring. because its too easy. but nobody is forcing you to wear legendary dragonplate with two enchantments. just wear robes. you'll be less bored.

Also the reason why all those empty areas is becuse I was using an skse mod that force increase FPS by auto lowering the game settings to allow for more fast based action & dodging ,
Far away Scattered Enemy's&npcs won't pop up unless im really close to them

the only thing people can give you here are ideas and mod recommendations, but nobody can give you the intrinsic motivation that you will play skyrim for several weeks straight.
Personally, I just play skyrim every now and then too, because even with my mods skyrim cant hold me longer than maybe 1 week of playing time. thats just how fallout / TES are for me. Cool in the short term because of new mods, but boring in the long run.
