"A Night to Remember" is glitched.
I did the drinking, woke up in the temple, and carried on with my main questline since I didn't want to start gathering up quests in another hold just yet (I already had 20+ quests to do).

This was ages ago, so going to a previous save is not an option.

Basically my problem is that I went to Whiterun, and Ysolda forces a conversation when I get near her. I knew I'm not supposed to talk to her about anything, and just go ask about Sam at Rorikstead like the quest tells me. But I clicked on the first option in Ysolda's conversation, which now showed up more options, and a "Retrieve the wedding ring" sidequest in "A Night to Remember", which I'm pretty sure wasn't there before. I meant to revert after that and avoid her this time, but I instantly forgot about doing it (after going to get some food irl), and I ended up doing a bunch more questing and dungeon clearing, then saving the game multiple times.

I eventually went over to Rorikstead, and walked up to the farmer with the quest marker above his head. Here's where the problem starts.

First off, I'm able to just ask him about the staff, which is super weird and unnatural. I've never met the guy, yet I can just walk up to him and ask "What did I say about the staff?" instead of first saying something like "I was drunk and might have come here, can you help?".

Secondly, when I ask about the staff, he just tells me some basic (and useless) information, and nothing happens. He still has the marker above his head and there's only the one conversation option to pick.

His goat also seems to already be there, happily walking around his farm with a bell around her neck. I really want to do this quest properly, and do all the sub-quests. Is there any way to fix this?

Usually if you want more info on anything skyrim related You can find exactly what you need to do at UESP.

Generally skyrim can get glitchy if quests are left half done for a long time. Especially if a conversation has been started and you opt out to do other stuff ... with possible dialogue scripts still running.
Which is why it is better to have previous saves to go back to, when possible.

That link should tell you what to do. Oh and it's a fun quest to role play and do all the extra bits

So the quest reference ID is DA14 (from what the uesp says), and after doing "player.sqs [quest ID] in console, I found that I have skipped over some stages (since there were stages with a 0, meaning not done).

Apparently the command to set a stage is in the following structure:
SetStage [quest ID] [stage number]
So I typed "SetStage DA14 0" since I wasnted to completely reset the quest, but afte exiting the console, absolutely nothing changed. I'm not being taken to the Temble of Dibella, and the marker above Ennis' head is still there.

The goat is still very much there. Though I can talk to Ennis and the text I previously selected, is now bright white (meaning it hasn't been selected before). And although it makes him say an extra sentance of dialogue, nothing still happens afterwards. I will go to the Underkeep in Markarth and see if I can talk to the priestess.

Also, when I set the stage, the stages further on don't reset. So if I have stage 50 at "1", and I set stage to 5 or a stage lower than 50, it stays on "1".

EDIT: Just went to the Temple, and I can't talk to her (other than asking bs questions about the temple). I even set the stage to 0 again, a still nothing.

Set stage cannot reverse a lot of things that are already baked into the save game your playing. Sometimes it works others it doesn't. It's a matter of how badly you want to do a particular quest.

If your desparate enough then it may be you'll need to reload a previous save to be able to replay it. Levelling in skyrim is that quick that it hardly matters.
With quests like this, once a script has been run it has selected one path going back is virtually impossible.

To try again You can do several things, one is to shut down your computer to get skyrim to reset it hooks and give you best possible chance.
Also sleeping in a small bedroom for a month so that all of skyrim has been reset can help for some issues.

You can of course reload a previous save do this quest complete it properly then decide whether to keep going on latest save or that previous one. After all the fun of Skyrim is the exploring and doing quests
