I chose the sap during The Blessings of Nature but the Gildergreen hasn't bloomed
Not entirely sure what's going on. I went with the sap option but it's been multiple in-game days spent in multiple cities and every time I return to Whiterun it's the same dead tree. Do I just have to wait longer or is there something I'm missing?

I know when I've done this quest it gives the same result whether you choose the sap or the sapling, it just has a few small branches with leaves near the not of the trunk.

I would rather they had either filled the tree or replaced it entirely with the sapling (aka a small tree starting out)

The tree is bugged, if you choose the sap it supposed to grow back but never does, and if you choose the sapling it is supposed to give you a slightly smaller but blooming Gildergreen but that also might not happen. I think the unofficial patch fixed the bug but if you don't have the patch or did the quest without it you're stuck with a dead tree.

I don't know about your issue, but if you choose the sapling then the tree won't change. This is because the game fails to disable the original, thus the sapling is hidden inside of it. Never heard of the game not updating the tree if you choose the sap though.

Anyway, it shouldn't take any time to change. If it hasn't changed in multiple days, then something went wrong. Also, the quest in general is known for being really buggy. For instance, after you return with that dagger the game is supposed to spawn in an npc in the temple that will offer you an alternative solution, but often times he fails to appear, leaving you with no option but to get the sap. And worse yet, if he doesn't appear then you'll have no hint that there IS an alternate path. This meant that a lot of first-time players did this conquest completely unaware that they had a choice in how things proceeded.

As for fixing this, I don't know, go check the UESP (an unofficial wiki). That site often has solutions to known bugs at the bottom of the page.

edit: Just checked it myself actually, and it says nothing about your problem. Weird. No idea how you could fix this. The normal way to fix the other problem with the tree (if you choose the sapling) is to just disable the dead tree, but that obviously isn't going to work here.

A guy appears in the Temple that wishes to accompany you to the Eldergleam Sanctuary, if you let him come and he survives the trip he gives the alternate route and he prays to the tree which presents a sapling. This avoids fighting the spriggans that spawn if you take the sap.

I would keep waiting, it shouldn't rely on the 30 day reset period but I would expect a few more days.

Use the Unofficial Skyrim Patch if you haven't already, then seek out the bugs section of either the UESP or Elderscrolls fandom wiki.

Along with USLEEP, Arthmoor has a mod called 'Gildergreen Regrown' which makes changes to that quest with Maurice. In the vanilla version, if you took the sapling and completed the quest that way, the sapling isn't shown and I think the tree remains dead. But with Gildergreen Regrown it removes the dead tree and you see the sapling grow over a period of 6 in-game months until its fully grown in all its glory.

Been playing with it in my game and works great. Think it needs to be installed before doing Danica's quest so may not be of help to you if you've already completed the quest.
