Even for a dwarf you are going to need archery, to get rid of Dragons.
LockPicking to get into chests and open doors in dungeons.
Maybe avoid sneak and pickpocket though.
Avoid magic skills, since dwarfs tend to mistrust magic.
(and Dwarfs is as valid as Dwarves for the plural, historically both were used in stories)
Archery as backup, i would go for a crossbow as that fits the theme a bit better.
For roleplay purposes i would NOT go for dwarven armor as that looks nothing like the stuff it LOTR, something else. I guess a combo of different armors, some dawnguard pieces seem to fit Gimli's outfit a bit.
It's a little tight across the chest.
In terms of armor, I would consider the Dawnguard set or maybe the Nordic Armor since look is something like Oakenshield might wear.
And in terms of race; without mod, I'm between the Nord or Wood Elf. Nords start off with high combat skills, but the Wood Elf is the shortest of the races, just would need to make him as buff as possible.
