In Mod Organizer, the left pane window shows you the order in which mod resources take precedence over one another -- the order in which resources are prioritized. This differs from the right pane, which shows the order in which the plugins are loaded when the game starts. I may not be using standard phraseology when I say load and sort order, the terms are a bit squishy. Both panes actually do represent a load order, but the right pane shows the plugin load order, the left pane shows the mod load order and which resources within each mod that take precedence.
I don't know how to do anything similar in NMM, sorry.
Gopher has an excellent series of YouTube video instructions on Mod Organizer. View them all, in order, to get a really good understanding of how Mod Organizer works.
Profiles have been introduced in NMM, but it would take too long to detail here what they really are and how they're used.
Start here, and really do view them all... you may need to replay some of them several times to fully understand what they're telling you but these videos are priceless.
