Unfortunately once you have started building the wing, the design is locked in.

it's locked in. The nice thing is that there's three options per wing, and 3 houses you can build. So you can have all the wings, just in separate houses. I currently only have the house in Falkreath, which has the 3 towers. Library, Alchemy, and Arcane. No real bedroom and no armor showroom. I plan to build those in one of my other houses when I get it.

Same thing. Now searching for the solution. Nothing exept to turn off Heathfire so the full house will be deleted, but it doesn't worth it i think. Strange that there is still no mod for it.

There is no fix or mod for this - the info is baked into the save. If you do not have an earlier save to go back to, you're stuck with whatever you have.
