By early game, I mean about level 1 to 3

There are lots that can be pilfered early while avoiding fights, or cheezing them. These are good ones to remember locations of, when you see them, for subsequent playthroughs:

Bound Bow is one of my favorite go to items. Level 1-3ish and you can have a bow and arrow of Daedric quality. Might as well use it before it gets outdated. Just gotta be sneaky enough, or fast enough to grab it.

Blade of Woe with those backstab gloves that Astrid carries. That stuff really helps my backstabbers early on. Not to mention sneaking in and grabbing Predator's Grace boots.

The Long Hammer is a really nice two hand weapon. Many others too, like Aegisbane, Oathblade, can all be used with those Ironhand Guantlets that improve two handed damage.

The list goes on and on. Probably easier to check some Youtube videos or item lists at wiki to get ideas.

Ack, forgot to mention quest items! They are ZERO encumberance while flagged as quest items. Some poor sods like Proventus won't see their toys for a while. Ones that take both smithing material and perk improvments are favorites.
